This commit starts updating the docs to Grails 7 by adding an upgrade guide. Dependency versions are not yet known and are set as X.X.X. Added section on breaking changes, in particular the problem with inheritance in GORM.
`-XX:+CMSClassUnloadingEnabled` is not valid for Java 17
