Audit Data Source

As the repo sits right now, under constants/ we have a lot of json files with very static data. This is not ideal

We need to audit the data thats, where it came from, and then document the sources themselves.

AC:

• Outline sources in sheet [TODO link sheet]
• Highlight fields we want
• Document access information to the respective sources
